Recipe: Polenta-Crusted Fried Chicken With A Kick

Ready in 30 minutes Serves 2 Polenta crusted fried chicken with a little smoky spicey kick. Ingredients: 2 chicken breasts ¼ cup polenta salt and pepper to taste 1 tablespoon of a smoky seasoning blend, I used Mt Elephant Seriously Smokin' ¼ grated parmesan ¼ cup of almond meal ¼ cup plain flour 1 egg 1 tablespoon of water ¼ cup olive oil Method: Cut the chicken breasts into smaller pieces. In a bowl combine the flour and almond meal.  In a second bowl beat the egg with the water.  In a third bowl combine the polenta, salt, pepper, seasoning and parmesan.  Pick up a chicken piece cover it with the flour mixture, dip it in the egg mixture to coat it, then roll it around in the polenta mixture, and set aside. Repeat until all the chicken pieces are done. Add the olive oil to a heavy saucepan (you may need extra to top up.  Once the oil is hot using tongs place several chicken pieces in the saucepan, fry each side for 2 minutes and then set aside. Gippsland Art Gallery - Art Aid

Gippsland Art Gallery has been inundated by artists and donors wanting to support the fire relief effort by submitting artworks for a fundraising auction - Art Aid Gippsland. All money raised from the art auction will be donated to the Gippsland Emergency Relief Fund (GERF) to help support those who have lost their homes and property in the devastating East Gippsland bushfires. A selection of artworks will be displayed at the Gallery from Saturday 15 February to Sunday 15 March culminating in an auction on the final day, on Sunday 15 March.

Gippsland Art Gallery - Art Aid - Nicole Tattersall and Megan Dell

Throughout my early years as an exhibiting artists many of the exhibitions and events I was apart of were in the Gippsland region, partly due a supportive auntie who owned a gallery in Leongatha. I also would take frequent surf trips through Gippsland which made it easy for me to visit galleries and arrange the showing of my artworks. The important role that the Gippsland community has played in my success as an exhibiting artist and the connection I have to the area through family made it a no brainier for me to make a donation of artwork to the Gippsland Art Gallery, Art Aid Gippsland auction. I have donated two collaborative skateboard artworks that I painted with Megan Dell, who also has strong family ties to Gippsland. I have donated 100% of funds from their sale to the Gippsland Emergency Relief Fund (GERF).

UPDATE 1 April 2020: 
The auction raised over $160,000 for the Gippsland Emergency Relief Fund (GERF). GERF is a registered charity that helps Gippslanders affected by natural disaster events. Yes, my two pieces were sold at auction, contributing a total of $145 to the towards this amazing achievement.
